# Directions:

01 - Preheat oven to 400°F.
02 - Heat olive oil in a skillet over medium heat. Add diced onion and cook for 2-3 minutes until softened. Add garlic and jalapeño; sauté for 1 minute.
03 - Add ground beef, breaking it up with a spoon. Cook until browned, about 5-6 minutes.
04 - Stir in cumin, smoked paprika, chili powder, oregano, salt, pepper, and tomato sauce. Simmer for 2-3 minutes until thickened. Remove from heat.
05 - Spread tortilla chips on a large baking sheet or oven-safe platter. Evenly distribute the spiced beef over the chips.
06 - Top with black beans, cheddar, and Monterey Jack cheese.
07 - Bake for 8-10 minutes, or until cheese is fully melted and bubbly.
08 - Remove from oven. Scatter cherry tomatoes, black olives, pickled jalapeños, and chopped cilantro over the nachos.
09 - In a bowl, mash avocados with lime juice until creamy but slightly chunky. Fold in tomato, red onion, cilantro, salt, and pepper.
10 - Serve nachos immediately with guacamole and, if desired, sour cream and hot sauce on the side.

# Expert Tips:

01 -
  • The spiced beef filling comes together in minutes but tastes like it simmered for hours
  • Homemade guacamole makes all the difference between good nachos and unforgettable ones
02 -
  • Spread the chips in a single layer without too much overlap or youll end up with soggy patches where the cheese never melts properly
  • Let the beef mixture cool slightly before layering it on the chips or the cheese will melt too fast and slide right off
03 -
  • Dont skip the tomato sauce in the beef mixture, it creates a clingy texture that keeps the seasoning on every chip instead of settling at the bottom of the pan
  • Make the guacamole right before serving because avocados brown quickly and nothing beats the flavor of freshly made
