01 - In a medium mixing bowl, combine the softened cream cheese, softened unsalted butter, finely chopped fresh chives, finely chopped fresh dill, kosher salt, and ground black pepper. Mix thoroughly until the mixture is smooth and well combined.
02 - Using a shamrock-shaped cookie cutter, carefully cut out shamrock shapes from each slice of the white sandwich bread.
03 - Spread a generous, even layer of the prepared herbed cream cheese mixture onto one half of the shamrock-shaped bread pieces.
04 - Evenly arrange the thinly sliced cucumber over the cream cheese layer on the bread.
05 - Place the remaining shamrock bread pieces on top of the cucumber and cream cheese to form complete sandwiches.
06 - Lightly press the sandwiches together. If desired, garnish with a sprinkle of extra chives or a few parsley leaves for presentation.
07 - Serve the shamrock-shaped cucumber sandwiches immediately. Alternatively, cover them with a damp towel to prevent drying and refrigerate until ready for service.
