- Preheat oven to 400°F. Line a baking sheet with parchment paper.
- In a mixing bowl, combine crumbled feta, softened cream cheese, chopped parsley, dill, lemon zest, and black pepper. Mix until thoroughly blended and smooth.
- Lay one phyllo sheet on a clean work surface and brush lightly with melted butter. Place a second sheet on top and brush again. Cut the stacked sheets lengthwise into three equal strips.
- Place a heaping tablespoon of feta filling near one end of each strip. Fold the sides inward and roll up tightly to enclose the filling. Repeat with remaining phyllo sheets and filling to create 12 rolls total.
- Position rolls seam-side down on the prepared baking sheet. Brush tops generously with remaining melted butter for golden browning.
- Bake for 18-20 minutes until rolls achieve deep golden color and crisp texture throughout.
- While rolls bake, combine honey, chili flakes, lemon juice, and salt in a small saucepan over low heat. Warm gently for 2-3 minutes, stirring constantly, until fragrant and infused. Avoid boiling. Remove from heat and set aside.
- Transfer hot feta rolls to a serving platter and drizzle immediately with warm spicy chili honey. Serve while crisp and warm.
