Oven Fried Feta Rolls Spicy Chili Honey (Printable)

Golden phyllo rolls stuffed with herbed feta, topped with spicy honey glaze

# What You'll Need:

→ Feta Rolls Filling

01 - 7 oz feta cheese, crumbled
02 - 3.5 oz cream cheese, softened
03 - 2 tbsp fresh parsley, finely chopped
04 - 1 tbsp fresh dill, finely chopped
05 - 1 tsp lemon zest
06 - 1/4 tsp black pepper

→ Phyllo Pastry Assembly

07 - 12 sheets phyllo pastry
08 - 2 oz unsalted butter, melted (or olive oil for brushing)

→ Spicy Chili Honey Drizzle

09 - 1/3 cup honey
10 - 1-2 tsp chili flakes, adjust to taste
11 - 1 tsp fresh lemon juice
12 - Pinch of salt

# Directions:

01 - Preheat oven to 400°F. Line a baking sheet with parchment paper.
02 - In a mixing bowl, combine crumbled feta, softened cream cheese, chopped parsley, dill, lemon zest, and black pepper. Mix until thoroughly blended and smooth.
03 - Lay one phyllo sheet on a clean work surface and brush lightly with melted butter. Place a second sheet on top and brush again. Cut the stacked sheets lengthwise into three equal strips.
04 - Place a heaping tablespoon of feta filling near one end of each strip. Fold the sides inward and roll up tightly to enclose the filling. Repeat with remaining phyllo sheets and filling to create 12 rolls total.
05 - Position rolls seam-side down on the prepared baking sheet. Brush tops generously with remaining melted butter for golden browning.
06 - Bake for 18-20 minutes until rolls achieve deep golden color and crisp texture throughout.
07 - While rolls bake, combine honey, chili flakes, lemon juice, and salt in a small saucepan over low heat. Warm gently for 2-3 minutes, stirring constantly, until fragrant and infused. Avoid boiling. Remove from heat and set aside.
08 - Transfer hot feta rolls to a serving platter and drizzle immediately with warm spicy chili honey. Serve while crisp and warm.

# Expert Tips:

01 -
  • The phyllo gets impossibly crispy without deep frying so you get all the crunch with way less mess
  • That spicy honey drizzle is basically liquid gold and you will want to put it on everything afterwards
02 -
  • Room temperature filling spreads easier but cold filling is less likely to leak during baking so I usually work quickly
  • The honey thickens as it cools so gently rewarm it if needed but never microwave it or the texture changes completely
03 -
  • Brush butter all the way to the edges of the phyllo because those browned crispy edges are the best part
  • Let the rolls cool for just 2 minutes before serving so the filling sets slightly but they are still warm
