# What You'll Need:

→ Bread

01 - 2 slices whole-grain bread

→ Avocado Mixture

02 - 1 ripe avocado
03 - 1 teaspoon fresh lemon juice
04 - 1 tablespoon chopped fresh chives or parsley
05 - Salt and freshly ground black pepper to taste

→ Eggs

06 - 2 large eggs

→ Toppings

07 - 1 tablespoon crumbled feta cheese optional
08 - 1 teaspoon extra virgin olive oil
09 - Pinch of red pepper flakes optional
10 - Microgreens or extra herbs for garnish

# Directions:

01 - Toast bread slices to desired level of crispness using a toaster or grill pan
02 - While bread toasts, halve and pit the avocado. Scoop flesh into a bowl and mash with lemon juice, chopped herbs, salt, and pepper until creamy but still slightly chunky
03 - For fried eggs: heat a nonstick skillet over medium heat, lightly oil if desired, and fry eggs to preferred doneness (sunny side up or over easy, about 3-4 minutes). For poached eggs: bring water to gentle simmer, add splash of vinegar, and poach eggs for 3-4 minutes until whites are set
04 - Spread mashed avocado mixture evenly over toasted bread slices
05 - Place one cooked egg on top of each avocado-covered toast slice
06 - Drizzle with olive oil, sprinkle with feta cheese if using, add red pepper flakes, and garnish with microgreens or additional fresh herbs
07 - Serve immediately while toast is warm and crispy

# Expert Tips:

01 -
  • The contrast between the silky avocado and the runny egg yolk creates this perfect sauce that soaks into the toast just enough without making it soggy.
  • Its incredibly adaptable to whatever herbs or toppings you have on hand you can dress it up for guests or keep it simple for a quick weekday breakfast.
02 -
  • Adding a tiny splash of vinegar to your poaching water helps the egg whites coagulate quickly and prevents those wispy white tendrils that can make your egg look messy.
  • The avocado mixture actually tastes better if you make it while the bread is toasting rather than preparing it ahead of time the lemon juice can only prevent browning for so long.
03 -
  • If making multiple servings, toast the bread in batches rather than all at once so each piece is at its peak crispness when you add the toppings.
  • For the silkiest avocado spread, use the back of a spoon to press the mixture through a fine mesh sieve after mashing not necessary for everyday but creates restaurant-quality results for special occasions.
