01 - Pat steak cubes dry with paper towels. Season evenly with salt, pepper, and smoked paprika on all sides.
02 - Heat olive oil in a large skillet over medium-high heat until shimmering and lightly smoking.
03 - Add steak in a single layer, cooking in batches if needed to avoid overcrowding. Sear undisturbed for 1–2 minutes until a deep brown crust forms, then flip and cook 1–2 more minutes until desired doneness is reached. Transfer to a plate and tent loosely with foil.
04 - Reduce heat to medium. Add butter to the same skillet. Once melted and foaming, add garlic and sauté for 30 seconds until fragrant but not browned.
05 - Return steak bites to the pan, toss to coat thoroughly in garlic butter, and cook for 1 minute. Remove from heat, sprinkle with parsley and thyme, and serve immediately.
