Tender chicken and fresh vegetables with savory hibachi sauce, all cooked in your air fryer for a quick and satisfying meal.

# What You'll Need:

→ Chicken

01 - 1 lb boneless, skinless chicken breast or thighs, cut into 1-inch cubes
02 - 1 tbsp vegetable oil
03 - 1/2 tsp salt
04 - 1/4 tsp black pepper

→ Vegetables

05 - 1 medium zucchini, sliced into half-moons
06 - 1 red bell pepper, cut into 1-inch pieces
07 - 1 small yellow onion, sliced
08 - 1 cup mushrooms, sliced
09 - 1 cup broccoli florets

→ Hibachi Sauce

10 - 2 tbsp low-sodium soy sauce
11 - 1 tbsp sesame oil
12 - 1 tbsp rice vinegar
13 - 1 tbsp honey or sugar
14 - 2 cloves garlic, minced
15 - 1 tsp fresh ginger, grated
16 - 1/2 tsp toasted sesame seeds

→ Garnish

17 - 2 green onions, thinly sliced
18 - Extra sesame seeds

# Directions:

01 - Toss chicken pieces with vegetable oil, salt, and black pepper in a large bowl until evenly coated.
02 - Whisk together soy sauce, sesame oil, rice vinegar, honey, garlic, ginger, and sesame seeds in a separate bowl until well combined.
03 - Add zucchini, bell pepper, onion, mushrooms, and broccoli to the seasoned chicken. Pour half the hibachi sauce over the mixture and toss to coat evenly.
04 - Preheat air fryer to 400°F for 3 minutes before cooking.
05 - Place chicken and vegetable mixture in a single layer in air fryer basket, cooking in batches if necessary to avoid overcrowding.
06 - Air fry for 10-12 minutes, shaking basket halfway through cooking, until chicken is cooked through and vegetables are crisp-tender.
07 - Transfer to serving platter, drizzle with remaining hibachi sauce, and sprinkle with green onions and sesame seeds. Serve immediately with steamed rice.

# Expert Tips:

01 -
  • The sauce hits that perfect salty sweet spot that makes you want to lick your plate
  • Everything cooks in one basket so cleanup is literally just wiping it down
02 -
  • Overcrowding the basket is the number one mistake people make and it turns this into steamed mush instead of crisp deliciousness
  • Let the sauce sit for at least five minutes before using so the garlic and ginger can really infuse into the liquid
03 -
  • Grate your ginger against a microplane so it practically melts into the sauce instead of leaving stringy bits
  • Line your air fryer basket with parchment paper for cleanup that takes literally ten seconds
