# Expert Tips:

01 -
  • Ready in under 30 minutes but tastes like restaurant quality
  • The velveting technique makes the beef impossibly tender every single time
  • Customizable with whatever vegetables are lurking in your crisper drawer
02 -
  • Crowding the wok while searing beef causes it to steam instead of sear, so work in batches if necessary
  • Have everything prepped and within reach before you turn on the heat because stir-frying happens lightning fast
  • Let the sauce bubble for a full minute to cook out any raw cornstarch taste, or youll regret it
03 -
  • Slice your beef when its partially frozen for cleaner, more uniform cuts
  • Use a cast iron skillet if you do not have a wok, it holds heat beautifully and creates a nice sear
  • Double the sauce recipe if you love your stir-fry extra saucy over rice
