→ Assembly

18 - 4 large (10-inch) flour tortillas
19 - 1 cup shredded cheddar or Monterey Jack cheese
20 - 1 cup shredded lettuce
21 - 1 medium tomato, diced
22 - 1/2 cup sour cream
23 - 1/4 cup fresh cilantro, chopped (optional)
24 - Hot sauce or salsa for serving

# Directions:

01 - Heat olive oil in a large skillet over medium heat. Add chopped onion and sauté until softened, about 3 minutes. Add garlic and cook for 1 minute more until fragrant.
02 - Add ground beef to the skillet, breaking it up with a spatula. Cook until browned, about 6 to 8 minutes. Drain excess fat if necessary.
03 - Stir in cumin, chili powder, smoked paprika, oregano, salt, pepper, and tomato sauce. Simmer for 3 to 4 minutes until the mixture thickens. Remove from heat.
04 - In another skillet, combine cooked rice, black beans, cumin, chili powder, and lime juice. Warm over low heat for 2 to 3 minutes, stirring occasionally. Season with salt and pepper to taste.
05 - Heat tortillas in a dry skillet or microwave until pliable and warm.
06 - Lay a tortilla flat and spoon one-quarter of the rice and bean mixture onto the center. Top with one-quarter of the seasoned beef, cheese, lettuce, and tomato. Add a dollop of sour cream and sprinkle with cilantro if desired.
07 - Fold in the sides and roll up tightly into a burrito. Repeat with remaining tortillas and fillings. Serve immediately with extra salsa or hot sauce on the side.

# Expert Tips:

01 -
  • The beef filling gets better overnight so consider making double
  • Everything comes together in under an hour even on busy weeknights
02 -
  • Cold tortillas will crack every single time
  • Let the beef filling cool slightly before assembling or your tortilla will get soggy
03 -
  • Double the beef recipe and freeze half for next time
  • Warm your serving plates so the burritos stay hot longer
