# Directions:

01 - Preheat grill or grill pan to medium-high heat.
02 - In a bowl, toss chicken cubes with olive oil, smoked paprika, garlic powder, salt, and black pepper until well coated.
03 - Thread the seasoned chicken pieces onto soaked wooden skewers.
04 - Grill skewers for 8–10 minutes, turning occasionally, until chicken is cooked through and lightly charred. Brush with barbecue sauce on all sides during the last 2 minutes of cooking.
05 - Combine salad greens, bell pepper, cherry tomatoes, cucumber, red onion, and avocado in a large serving bowl.
06 - Whisk together olive oil, lemon juice, Dijon mustard, honey, salt, and pepper in a small bowl until emulsified.
07 - Toss salad with dressing immediately before serving. Arrange BBQ chicken skewers on top and serve hot.

# Expert Tips:

01 -
  • The smoky charred chicken against crisp cool vegetables creates that perfect hot-cold contrast that makes summer meals sing
  • Everything comes together in under 40 minutes but tastes like you spent all afternoon preparing something special
  • The leftovers, if you somehow have any, make for the most enviable desk lunch the next day
02 -
  • The skewers will continue cooking slightly after you remove them from the grill, so pull them when they are just barely cooked through
  • Dress the salad right before serving or the greens will wilt and lose their satisfying crunch
  • If your chicken cubes are larger than one inch, they will take longer to cook and might dry out before the center is done
03 -
  • Let the chicken rest for 2 to 3 minutes after grilling so the juices redistribute
  • Pre-slice your onion and soak the slices in cold water for 10 minutes to mellow their bite
